They use a method called 'Raw Palate making', making sake by cultivating pure & strong yeasts with basic acid made by lactic acid bacteria that are smashed in sake breweries by thoroughly crushing koji & steamed rice with traditional hand made items.
Kurosawsa Kuroga Sake Brewery founded in 1858, with the storehouse located at the top of the Chikuma River (800m above sea level). Clear air, clear water & with the blessings of nature, this sake is brewed by the locals.
Sweet, spicy bitterness is a well-balanced five-flavored sake & full of good rice cake taste & rich, deep flavor.
